Today Allison was supposed to have a few of her girlfriends over for a shower for her friend T.R.. Unfortunately for them the weather did not cooperate and it snowed pretty well in the morning and fouled the roads. Fortunately for us we could have these delicious pancake bites that Allison had made. She made blueberry, chocolate chip and bacon ones. Each one was delicious and Allison did make one special bacon/chocolate chip one for me but Eva got that one. She liked it.
These mini pancake bites were made in mini muffin tins and were super easy to make. Much easier than regular pancakes. You can bake them ahead of time and warm them up for breakfast or even breakfast for dinner.
