Don’t… Just don’t.
We froze the top of our wedding cake for a year and then ate a piece last night. The inside of the cake was not too bad. But I tried the icing and nearly threw up.
Here’s what we did wrong:
We wrapped the cake in tin foil and froze it thus allowing the cake to absorb every smell and taste from the freezer for an entire year.
What we should have done was cut a piece of cake, froze it overnight to get it hard and then used the food saver to vacuum seal it for the year. At least that would not have made me almost wretch.
Rather than coming up with better ways to eat year old cake perhaps the answer really is don’t eat year old cake.
I don’t think there are many things I would want to eat after a year of being stored even if they were frozen.
