Meal preparation is one of the things that I do while Allison is at work. Sometimes I like to surprise the family with a tasty dessert. I’m always looking for new ideas and coming up with some of my own. When asked to participate in this #ThankfullySweet project with #CollectiveBias I was excited because I could use my creativity with Mrs. Smith’s Pies and Kraft Cool Whip. Mrs. Smith Pies and Cool Whip Purchases

Is there anything more delicious than a big dollop of Cool Whip on a piece of pie? I am going to say yes, yes there is. I’ve created two desserts with the same ingredients and they were both big hits with the family. At least one of the desserts will become something I will serve again. Actually, this coming weekend I will be serving it to the folks I work with. We’re doing a Pie Party Pot Luck over the course of the weekend. I will be introducing everyone to the Sweet Potato in the Pumpkin Patch Parfait, right after I tell you all about it in the video and recipe below.

What is really nice about the Sweet Potato in the Pumpkin Patch Parfait is that you can have a little taste of many dessert flavors and textures in one cup and not overdo it.

Sweet Potato in the Pumpkin Patch Parfait

I decided that I wanted to combine a Mrs. Smith’s Pie with cake. I really wanted to see a fun layered look to the dessert. My heart was set on Pumpkin Pie but I was unable to obtain one at my store. I decided that I would try out sweet potato pie for the first time because it had the look and consistency that I wanted for my recipe. Also, it was as close to pumpkin pie as I was going to get. I was glad that I got it because now I have another pie that I enjoy.

I knew that I was going to have leftover pie pieces and that is why I made the Sweet Potato in the Pumpkin Patch Parfait as well. This is much easier to assemble than the PieCake. You just take the pieces from all your ingredients, layer them nicely and you’ve got yourself an incredible dessert with complimentary flavors and textures. I love textures of food from the soft creaminess of the Cool Whip to the flaky buttery Mrs. Smith’s pie crust. Okay, I’ve talked long enough about how good it was. I should tell, and show, you how I made it.

Recipe for Sweet Potato in the Pumpkin Patch Parfait and PieCake

While I made two items I used the exact same ingredients, I just assembled them differently.

I started with a Sweet Potato Pie

Mrs. Smith Sweet Potato Pie

Ingredients

1 Mrs. Smith’s Sweet Potato Pie
1 Container of Kraft Cool Whip
1 Pumpkin Loaf Cake
1 Container of Pumpkin Ice Cream
2 Bamboo Skewers

Directions for PieCake

  1. Bake the Mrs. Smith’s Sweet Potato Pie to perfection
  2. Let Pie cool for Two hours on the counter and then an additional hour in the fridge
  3. Slice Pumpkin Loaf Cake Lengthwise
  4. Pumpkin Loaf sliced lengthwise in half and Mrs. Smith Sweet Potato Pie
  5. Lay bottom of the sliced Pumpkin Loaf Cake on a platter
  6. Lay top of the sliced Pumpkin Loaf Cake on top of the Mrs. Smith’s Sweet Potato Pie
  7. Use the top of the Pumpkin Loaf Cake to cut out a rectangle of pie
  8. Mrs. Smith Sweet Potato Pie with Pumpkin Loaf for Measuring
  9. Spread a layer of Cool whip on the bottom half of the Pumpkin Loaf Cake
  10. Place the Sweet Potato Pie layer on top of the layer of Cool Whip
  11. Mrs. Smith Sweet Potato Pie sliced to fit on top of the bottom of the Pumpkin Loaf with Cool Whip Between
  12. Add a Layer of Cool Whip on top of the Sweet Potato Pie layer
  13. At this point you may need to add bamboo skewers to stabilize the PieCake
  14. Spread Cool Whip around the whole PieCake
  15. Pumpkin Loaf with Mrs. Smith Sweet Potato Pie in the middle with Cool Whip layers and frosting sides.
  16. Cut Small Pie Wedges to place on the top of the PieCake along with a tiny dollop of Cool Whip
  17. Slice and serve with a scoop of Pumpkin Pie Ice Cream

Directions for Making Sweet Potato in the Pumpkin Patch Parfait

  1. Bake a Mrs. Smith’s Sweet Potato Pie to Perfection
  2. Cool the Pie for two hours on the counter
  3. Slice Pumpkin Loaf Cake and break up Sweet Potato Pie into pieces
    Set aside a few small “slices” for decoration
  4. Alternately Layer Pumpkin Loaf, Cool Whip and Sweet Potato Pie pieces into a clear container (Mason Jar, Margarita Glass)
  5. Finish with a small scoop of Pumpkin Ice Cream and a small slice of the pie with a tiny dollop of Cool Whip
  6. Serve and Enjoy

Finding the Mrs. Smith’s Pies and Cool Whip was super easy. They were right next to each other in the frozen dessert section at our local Walmart. There is even a coupon that you can use to get $1.00 off with the purchase of a Mrs. Smith’s Pie and a container of Cool Whip. The coupon will be live from Nov 10-Dec 10.
