Spicy Cajun Pickle and Onion Dip …

Over Christmas we were introduced to a pickle dip that my sister made. It was really good. I had been thinking about it ever since and decided that I would make my own. Today I picked up some greek yogurt and some sour cream as well as a packet of Knorr Onion soup. I took those items and added some mayo and chopped up pickles. I had enough to separate the mixture into two portions. It took one of them and added cajun spices and also some fried chili flakes in oil to make a spicy one.

I also found these new pretzel rings called Pressels over at Big Lots, (sadly our store is closing) and made sure to get as many bags as I could. These are perfect for dipping and they are light, crispy and tasty. I especially like the ones with sesame seeds.

Picking Pickle Cucumbers

I arrived home early this morning around 1:45am and then went to work from 3am – 7am. I didn’t have enough vacation time to take the full day off so that I could just go home and sleep and then come back to work. It worked out okay because I slept like a rock the entire day and only got up around 4pm. When I did wake up I saw that the kids and Allison had gone over to my Uncle’s house to play in the pool. I got up and showered and headed over to catch up with them.

The kids had a great time in the pool. They really enjoy swimming. Andrew had a little life jacket on and he was doggie paddling all around. Eva can stand in the pool so she was happy. I had some dinner thanks to Uncle Rich. The kids played with my cousin and they were picking cucumbers from the garden and eating them.
